Ingredients (for 4 people):

6 Artichokes “morelli”

1 garlic clove

 a small bunch of parsley

400 gr of fresh tagliolini pasta

50 gr of grated “pecorino” cheese

20gr of grated parmesan cheese

120cl of milk

1 spoon of cornstarch


For the sauce: boil the milk but keep a glass cold  milk to dissolve the cornstarch. When it boils turn off the heat  and add grated pecorino and parmesan cheese and also the cornstarch (dissolved into the cold milk). Mix it with a kitchen whip, turn on the fire and bring to a simmer and cook until the sauce will be thickened.

Clean the artichokes by removing the tough leaves, peel and trim the stems, then cut the artichokes in half and remove the choke. Than cut the artichokes into strips and cook them in a pan over medium heat with garlic, chopped  parsley  oil  salt and pepper (5/ 6 minutes)!

Cook the pasta according to instructions, drain it and mix in the sauce and the artichokes.
