A good meal is always accompanied by good wine!
At our bistrot in Florence, creating a selection of Tuscan wines is a fundamental aspect of our job and we search extensively for the right combination to enhance the taste of our menu.
A constant presence on the wine chart of our Il Desco Bistrot is a very peculiar rosè wine, which is made with 100% Sangiovese grapes, a very rare thing: the’Iveronirosè (Rosato di Toscana IGT).
Its defining characteristics are its colour, a very bright pink, a fresh yet full-bodied taste, perfect for an aperitivo or combined with white meat, fish or sushi.
The dishes that go better with Iveronisè are ones that are lightly cooked, never too complex: this Tuscan nectar is perfect with soups and puree soups as well as vegan and vegetarian dishes.
Our menus created with seasonal vegetables naturally match the delicate flavour of this wine, made with grapes that are harvested by hand into wooden casks and fermented with grape skins in steel barrels for 48 hours.
Its acidity, balanced with soft tannins, combined with essences of wild strawberries and flowers, is reminiscent of its origins, the “vigna al Pianottolo”, grown in the Chianti Rùfina area, ten kilometres away from Florence, in Pontassieve.
In this town, the Azienda Agricola I Veroni, a six-hundred-year old farm that extends for 70 hectares at a height of 250 meters above sea level – produces the Iveronirosè, which you can taste in our restaurant in the centre of Florence.
