Ingredients (for best results use organic ingredients and when possible ingredients from your region)

Sheep ricotta: 500gr.
Broccoli: 350gr.
Cardamom seeds
3 tbs of extra virgin olive oil + 1 to prepare the moulds
2 cloves of garlic
Ground nutmeg  to taste
Salt and Pepper to taste


Chop the broccoli and boil it for 3-4 minutes without adding salt to the water, strain and cool. Crush the cloves of garlic and sauté them in olive oil, add the broccoli and leave in the pan for 5 minutes, then add salt and remove the pan from the heat.
Put the ricotta in a bowl and mix it with the nutmeg, salt and a pinch of pepper. Add the broccoli, mix and then pour the mixture into the pre-oiled moulds. Warm up the flans in a steam oven (or steamer) for 5 minutes.
In a small pot , heat the olive oil and add the cardamom seeds. Cook until warmed but not too hot and filter the oil before using it to garnish the pies. Keep the pies warm.
Cut very thin slices of bread, lay them down on a baking tray, add olive oil and warm them in the oven at 180 C° for 5 minutes until they become fragrant and crunchy.
Take the flan out of the moulds and put them on a dish adding the slice of bread and drizzling the cardamom oil on top.

For an extra special touch

Add some crushed pistachios and beetroot chips!
